Sea Scallops
Additive-Free and Delicious
Sea scallops are harvested much farther from the shore in deeper waters. They are larger, measuring 1-2 inches in diameter. Regardless of their size, their flesh is light pink and cooks to an ivory color. They are free of preservatives and water, and have a high sugar content, so they caramelize beautifully and have a sweet, tender flavor and texture.
Sourced Locally and Sustainably
Our scallops are sourced from the Mid-Atlantic U.S. to Canada. We have regional suppliers in Nantucket, Cape Cod, Boston, and New Bedford, which is one of the largest scallop ports along the Eastern Seaboard. They are harvested either by divers hand-picking them or by trawls.
Scallops improve water quality and rebuild coastal habitats because they feed by filtering phytoplankton and removing suspended materials in the water. Stricter regulations on harvesting methods and seasons have helped the dwindling populations of scallops.
